Our Family's Favorite
Seafood Recipes


Have you ever gone to a restaurant, dined on wonderful seafood recipes, and then pondered
how you might prepare it at home?

Here are three of my favorite recipes for tantalizing seafood treats you can make in your own kitchen:

Seafood Pizza

Ingredients:

Pizza Base
Crab Meat
Oysters
Salt and Pepper to Taste
1/2 cup pizza sauce
Peeled Prawns
Grated Mozzarella Cheese
Oregano
*Add octopus and/or scallops if desired.

Directions:

  1. preheat oven to 410°;
  2. place pizza base on oven tray;
  3. spread with sauce, sprinkle crab meat evenly over sauce, scatter prawns over crabmeat, and add oysters on top;
  4. sprinkle with cheese, pepper, salt, and oregano;
  5. bake for 20 minutes or until cheese has melted and pizza base is crisp

Crab Bruschetta

Ingredients:

1 French bread baguette
220 gram flaked crabmeat or surimi seafood
1 cup tomato, seeded & chopped
1/4 cup yellow capsicum, chopped
3 tablespoons fresh chives, chopped
1 tablespoon fresh basil, chopped
2 tablespoons mayonnaise
1 teaspoon tomato paste
Olive Oil

Directions:

  1. cut baguette into 1/2-inch slices; arrange slices in a single layer on a baking sheet;
  2. bake in a medium oven for 4 minutes; turn slices over, brush lightly with olive oil and bake 4 minutes; cool completely (May be done ahead.)
  3. combine remaining ingredients, stirring gently to mix;
  4. spoon 1 tablespoon crab mixture onto each toast slice;
  5. serve cold or bake in a hot oven for 2 to 3 minutes or until heated through out *makes approx 45 pieces*

Mahi-Mahi Almondine

Ingredients:

4 to 8 oz. Mahi Mahi fillets
Salt and pepper
1 clove garlic
1/2 lemon
1/2 cup oil
1/4 cup slivered almonds
2 Tbsp butter
Minced parsley
Lemon juice

Directions:

  1. rinse and wipe fillets dry then sprinkle with salt and pepper;
  2. mix garlic and juice from 1/2 lemon with oil;
  3. marinate fish 30 minutes;
  4. remove from marinade, put pieces on a greased, heated grill, arranging so the fillets do not touch each other; brush fish frequently with the marinade;
  5. grill 4 or 5 minutes on each side; cook until fish flakes easily;
  6. top with almond topping;
  7. sauté 1/4 cup slivered almonds in 2 Tbsp butter until light, golden brown; stir in minced parsley and a few drops of lemon juice;
  8. spoon over grilled fish and serve immediately

These seafood recipes all make my mouth water! I already know how good they are!
